Our life in a post!

Hey All!

So I know I am not the best at keeping up this blog. I hop over every now and then but it is so much easier to just post on Facebook, ya know?

Things are going pretty well for us right now! We have purchased our first home in Tooele and we just honestly can't believe we're homeowners. I keep telling Colin that it's not much different from renting since I am still paying for it and don't downright own it! haha! It is a three bedroom, one bath upstairs and the basement is unfinished but will have a HUGE guest bedroom, another bathroom, a play area, laundry room and a family room. It is definitely going to take a while to finish it all up, but we love it and love having a place to call our own!

Colin is still working with Skretting, USA. In fact, he just celebrated his first year there! It has been a good job for him and we hope it will continue to be for a long while! He is loving being able to come home at 4:30 and spend the weekends with us. And since it is Father's Day I thought I would just post that I absolutely love this man. He is everything I never knew I wanted in an eternal companion. He is an incredible father full of patience and kindness. He is humble when he's right and admits when he's wrong. Colin is the best husband, too. He lets me know how loved I am at all times. He's just the best. Plain and simple.

I am now a STAY AT HOME MOM! Yay! This was actually a really hard/easy decision to make. It was hard to decide to leave an extra income but so easy when I looked at the eternal perspective. My children need me now. They are home ALL day right now. They are in their formative years. I know it was the right choice to make and I am grateful for the consistency and security we find in Colin's job that allows me to do this. I love my children and I am right where I need to be: At home with them.

Gideon is such an impressive little guy. Not only can he write his first name all by himself, he also writes anyone else's name he can. It is so incredible to watch his mind working. He is still a super hero fanatic! And I think that's wonderful. I know that some parents don't agree with letting their kids watch superhero movies and stuff because of the fighting, but I'm not those parents. Gideon has an incredible sense of right and wrong that he applies to real life. I know I try to teach him that but superheroes do it in a way cooler way! I think it's great that he wants to be a superhero. To me that means he wants to stand up for what is right, serve others, learn self-restraint and patience, and do those things that others may see as unpopular or unimportant. That, to me, is better than anything the Backyardigans sing about...

Kaleb is growing up...too fast! He is a mover. He loves to be outdoors. He loves animals. He loves water. He is compassionate and loving. He has a laugh that makes my world stop and smile. He is precious. He is struggling a little in speech but is making huge strides in critical thinking skills and interpersonal skills. He is a smart little guy. I don't think there's a single problem that Kaleb hasn't figured out. He also looks up to his older brother and I often catch them giving each other loves. That is so important to me because I want them to be best friends forever. I always make sure and tell them: Be nice to your brother because one day he'll be your best friend. Everyone else might leave you, but your brother will always be there. It may be a little too in depth for them to understand but I figure it sinks in all the same.

What the heck blogger????

So, FYI I have actually posted since April but apparently those posts were never published. Well...that makes me mad sad. It's too bad too because I've been posting several times a week! ok, that's a lie, but honestly, I have posted.

Apparently you all don't know quite a bit of what has happened to our little family since April! So we don't live in Logan anymore. WHAT?!?!?! i know, right? We moved to Tooele and Colin started a new job with Nelson and Sons Silver Cup Fish Feed in June. He likes it but I know he wants something better. I started a full-time job with Early Head Start to help contribute to our little family. I am a Family Specialist and basically I give lower-income families with pregnant women or children ages 0-3 HOPE. Hope that they can do it and even though they may struggle, we'll help every step of the way. It is neat to be able to use the education I got at USU in a different way. I don't do lesson plans or anything like that, but I do give suggestions on developing literacy, speech, health/hygiene, etc. It is pretty rewarding but in total honesty, I would rather be home with my boys.

Gideon is freaking awesome! He is just adorable! He turned three last Tuesday and I had a silent pity party for myself while we partied with Spiderman. Yeah, I'm a boob! My baby is no longer a baby as he so willingly tells me (except for when he wants something and is too lazy to get it...then he's a little boy...geez, I'm such a sucker). He L-O-V-E-S spiderman. If he could he would stalk follow Spiderman to the ends of the earth. Get this: he even sings and/or hums the Spiderman theme song. And it is so cute to catch him pretending he is Spiderman. Those are some serious Spiderman poses and web-slinging moves!

Kaleb is totally cool, too! He is already standing on his own and I think he'll be walking in a month. He is so animated it's not even funny! But beware, he yells! Not joking, either! If he doesn't get his way he gets this really serious look on his face and starts yelling. Quick example, with translation below:

"Adorable" just doesn't seem to say it. Oh, and the only association this boy knows is that "baba" means bottle. Yeah, he's an eater! The other night he ate more than Gideon and made himself sick. Poor guy...his tummy is too small for his gi-normous appetite.

Anywho, that's the condensed version of our lives. I'll try to be better about checking to make sure blogger works from now on! Promise!

Hello Everyone!

Hello, Hello! So it's been a while since I've given a true update on our family! I guess life gets busy after you have two kids! LOL! We are all doing very well and are healthy, thank goodness! Colin did graduate with an official apology from Utah State for taking their sweet time processing his graduation! His diploma is now gathering dust in our filing cabinet! Haha! Colin isn't working right now though he has applied to various positions in the U.S. with the possibility of going abroad... He did apply to Grad school at Texas A&M Corpus Christi and we are waiting to hear back on that. We took a short trip down and met with professors and toured their facilities. Colin found a committee chair and co-chair there and they have a cool internship program that would allow him to try his hand at a few things, but honestly, we're not sure what's in store for us. I'm thinking he's gonna work for a little while and get more experience under his belt. Plus, we have student loans and stuff to pay off so we aren't that anxious to add more to that pile! haha! I am loving being a mommy to two adorable boys! I am working part-time with the Food $ense Nutrition Program as a Nutrition Education Assistant in Cache County. I absolutely love this job!!!! I get to teach people how to make better, healthier decisions for themselves and their families and I get to make changes in my life as well! I'm not sure Colin is too thrilled about this change because it means we eat mostly whole grains and nothing with hydrogenated oils or excessive sugars or sodium (which is practically everything in a package these days!). I love it because I get to try new foods and I've found that my body doesn't crave the bad stuff anymore! When I get a craving for something sweet, it's usually for a fruit now! I've also been exercising more diligently. I'm proud to say that I am eight pounds shy of reaching the weight I was at when I first got pregnant with Gideon! I just have to keep at it! I really do wish there was a miracle pill out there, but I do enjoy the burn of my muscles that lets me know I'm doing my best! I am still the second counselor in the Young Women's Presidency of my ward. It's challenging and fun and terrible and awesome! Girls are so crazy! Thank goodness I only have sons! I think that's it for me! Gideon is AMAZING! He is such a sweetheart and he is so smart. I can't believe the things he knows and picks up! He is doing really well with reading and I think I'll start teaching him to write letters now. He may still need some help with fine-motor skills, but he can do it! It's really neat to see him in the Initial Reading stage. We are trying to work with the Spanish-speaking at our house...still hard but we are working on it! I still think it will be necessary to have the boys in a language immersion-type school/class but it will help if they have a leg up! Gideon request "school" now! We learn a letter, the sound(s) it makes, how the letter looks, a Spanish word, and words that contain the letter of the day. He really likes it and I like putting my teaching skills to work! I developed his whole curriculum to align to the USOE's Kindergarten core and Preschool Core. I think it will help him! He are doing a little more with science and looked at how snow melts and turns to water yesterday. Colin also had Gideon help him plant some seeds. I think he's getting a pretty well-rounded education for now! :) At night, he sleeps with at least five books that he "reads" until he falls asleep. I love that he already has a thirst for knowledge! He is a great big brother too! He'll put the baby's binky in his mouth and tell him it's ok if the baby is crying! He's adorable! Kaleb is growing so fast! I can't believe he's already three months old! He is doing a great job holding his head up and he is already trying to push himself up to his knees when he does tummy time! He certainly makes Colin and I work for his smiles and laughs! He is so cute though! It's so weird to have a baby that actually wears the correct size at the correct time! Gideon was wearing some six-month clothes at his first birthday! Kaleb is already getting too big for the 3-month clothes. I did put away all of the newborn clothes and must admit I shed a few tears. But I am grateful that Kaleb is growing and is healthy! He is a cutie-patootie! Next weekend we will be going to Nephi for Easter and I'm egg-cited! Oh geez, that was lame! But really, I am! It's been a while!

I failed! I wanted to post at least once a month, but alas! I didn't get it done in February! I do have some things to post about that happened in February, but not tonight! Tonight is about our St. Patrick's Day! The Leprechaun sure did visit our house! He left the boys some cute green presents and he left Colin and I some Ferrero Rocher and green mints! Oh yeah, and this Leprechaun is awesome! He even left us some yummy green smoothies and green pancake mix for breakfast...for dessert he left magic cookies that turned green when you stirred the batter! Here's a video of the morning! The Terrible Wife...Starring ME!

So I didn't post about my husband's 26th birthday! Yep, I'm horrible! It was a very fun birthday for him because he was home and we got to spend the whole day together! He got some pretty fun stuff too! He got a multi-day hiking backpack, a bladder (for the backpack, there are no medical emergencies to tell you about haha), a bladder cleaner (didn't realize they made these but am so grateful they do!), and a camping lantern! Fun stuff for my outdoorsman! Colin is just the most wonderful guy ever! He's H-O-T, an excellent husband, and an excellent daddy to his two favorite boys! Love you, boo!

It's a BOY!

We wanted to let you know that we have welcomed our little boy Kaleb Garrison! Kaleb was born on January 6, 2010 at 8:56 a.m. He weighed 8 lbs. 9 ozs. and was 20 inches long. He is absolutely adorable if I do say so myself! He has the chunkiest cheeks that jiggle every time I burp him! His eyes are a gorgeous blue-ish color that I know won't last but I sure am enjoying them right now!

For those of you who care about the labor:
I went into labor about 3:30 a.m. Thursday morning and did really well with it. At about 8:00 I realized I probably wasn't going to make it to my 9:30 Doctor's appointment! I let Colin know we needed to get ready to go and we got things set...slowly. It took us another 35 minutes or so to get out the door and into the car to drop Gideon off at my friend Delia's while we went to the hospital. Once in the car, I'm freaking out because the baby is coming and I feel like I need to push and Colin and Gideon are taking their sweet time! (Please note: several exaggerations will be used in this story!) As we're pulling out of the complex, a garbage truck blocks our way! So we have to turn around and go the long way around the complex and drive to Delia's. Once we get to Delia's, Colin takes Gideon out and says he's going to take the car seat out too. YEAH, RIGHT! I tell him there is absolutely NO time, the baby is coming NOW and he better just drop Gideon off and get his cute little butt back in the car. So as they are WALKING to Delia's door, I have another contraction and my water EXPLODES (not an exaggeration) in the car! I roll the window down and try to act calm (so I don't scare Gideon) but yell out, MY WATER JUST BROKE (so Colin would pick up the pace...)!!! Well, we finally get to the hospital and then realize we have no idea where we are going! We had Gideon in Delta so we've never been to the Logan Labor and Delivery. Colin parks in a parking spot and then I have to walk all the way to the hospital entrance, get in a wheelchair, take the elevator to labor and delivery and then make our way through the hospital until we get to check in... When we get to Registration, the nurse looks at me and asks Colin, "Is she in labor?" DUUUUHHHH! I basically told her that yes I was in labor and could she please open the door so I can go and have a beautiful little baby when she got the time (this is an exaggeration, I basically yelled, "I'm having this baby NOW!"). So the staff at Logan Regional is amazing! They got me in there undressed and in a hospital gown and had everything set up for me. Besides the fact that they kept telling me not to push, they were spot on with my care! So the entire time, which actually only amounts to about ten minutes, I'm pushing while they are telling me not to push and my OB gets there just in time to watch Kaleb make his way into the world! Dr. Olsen and I were the first to see that it was a boy and I immediately got to hold him (the baby, not Dr. Olsen)!

Kaleb's 1 minute Apgar was an 8 and his five minute was a 9. He still has a pretty high bilirubin count, but it isn't too bad so he won't have to do the lights...hopefully.

We are home and doing well and we appreciate all of your warm wishes and congratulations!

It's the most wonderful time of the year!

Hello everyone!
I just wanted to let you all know that I love you and am so happy to have you in my life! You are all such a blessing to Colin and I.

We were glad to see so many family members this Christmas season and thought of those who weren't around often. We didn't get to spend much time with friends so let me take this opportunity to say Merry Christmas and Happy New Year! Thanks for your continued friendship!

Now for the update:

Christmas was fabulous! Gideon got a Radio Flyer tricycle from Santa and he absolutely loves it! He has only been riding for a few minutes at a time though thanks to the cold weather! LOL! He also got a "choo-choo", lots of clothes, a darling pea-coat; a baseball mitt; and lots of other stuff that I'm sure will be lost within the next few weeks ;)!

Colin got two sleeping bags and a small tent so he can have some father-son adventures with Gideon; some movies; two hoodies; some Aggie gear; two new church shirts and ties; and a fun book called "Kerplunk!"

I made off really well with a Glee CD, food processor, MP3 player (yeah I've never owned one...), a fondue pot, a hoodie, an Aggie shirt, movies, and the new Taylor Swift CD.

That's right, we're spoiled! Especially since Colin and I had so much to be thankful for this year that we didn't ask for ANYTHING! Thanks everyone!

So, Colin took the GRE. We are just waiting for scores...fingers crossed! He is glad to be done with school, though we're not sure if he has officially graduated because of a very annoying advisor that hasn't done his part. Don't worry, the angry letter is written and ready to be sent as soon as I need to ;). I say officially because he has completed all of the requirements, the advisor just hasn't pushed the paperwork and now it's the holidays and apparantely no one works during this time. It's all good. I'm sure we'll be around for a little while longer. Beware Wayne Wurtsbaugh: nine-months along and bad news don't mix well! LOL!

I am just getting through this pregnancy! I'm totally excited/nervous! Now that the main holidays are over, baby #2 is welcome at any time...except for after my due date! LOL! But seriously, we are anxious to meet the newest addition and find out the sex! Other than that, I'm just working on vinyl! I absolutely love my little vinyl shop and am experiencing success with it this year! Finally MAKING money instead of spending it! LOL! Gideon is just as adorable as ever!!! I can't believe how much he keeps growing. Sometimes I want to yell at time and tell it to stand still so I can have all of those past days for just a little longer but then again, he gets cuter and cuter as time goes by. It's a lose/lose for a mother! He amazes us with his intelligence. He can accurately identify several letters in the alphabet and can also read a few words like mom, ball, clap, etc. We just love him!

Well, It's December

Greetings everyone!

We have been having a pretty awesome time just enjoying the Logan cold and getting through Colin's final semester at Utah State!

We had an excellent Thanksgiving!!! Colin's parents and little brother were here to celebrate with us and we had a ton of fun! I am also glad to report that I pulled off my first ever Thanksgiving all by myself! It was so rewarding to hear the mmm's coming from appreciative mouths! LOL! I am pretty proud because I spent the first half of Thanksgiving morning in the hospital trying to get some much-needed drugs for this terrible cold/infection I've been battling! By the way, those drugs are still needed as the ones they gave me then are useless...

Anywho, I totally went against all things Thanksgiving and had Colin spatchcock the turkey. It turned out to be the best decision I've ever made in my life! The turkey was moist and cooked in a little over an hour...that's right an HOUR! Apparently it was the most delicious turkey anyone at our Thanksgiving table had ever had. I say apparently because I hate turkey and didn't touch the thing.

I also don't like stuffing but made it because I'm a stickler for traditional Thanksgiving foods. Well, I guess there's something to not liking Thanksgiving foods, because Colin's family (especially Lauren) raved about the stuffing and said it was the best they had ever had. I give credit to using way too much butter in EVERYTHING! LOL!

Anywho, enough tooting my own horn! This week is going to be a pretty difficult one for Colin because he is getting ready for all of his finals, papers, etc. And on Saturday...the GRE. I'm not worried about it. Colin is the smartest guy I know. I think he's more nervous that it's a "oh-my-gosh-this-determines-whether-I-get-into-a-good-school-or-not" kind of test. Whatever, he'll do great. But if you want to say a little prayer for him sometime this week, he would really appreciate it!

Gideon is going strong and being all boy! He absolutely loves Spiderman and anything "Ho Ho Ho" which is anything Nightmare Before Christmas/Christmas related. Yes we sorta screwed up our son by letting him watch Jack Skellington dress up as Santa. My mother-in-law is not pleased. I could care less. Actually, I think it's kinda cute. For Christmas he wants a bike. Every time he sees Santa he starts yelling at him: "Bike, Bike, Bike!" It's totally adorable. Oh yeah, and he actually likes Santa this year! Woohoo! Thank you Jack Skellington, LOL!

I am doing ok, except for the cold/infections. I'm totally thinking that the Lord is preparing me for this new baby because for the past two weeks I've been up every two hours every night. Maybe I should be grateful. And I am. Truly. I am so blessed! I have a wonderful family and another baby on the way. We have a home and we have parents who love and support us. I am grateful.

We are all excited about the new baby coming in January!!!! Gideon has started organizing everything he owns into "big" or "little". If it's big then it's his and if it's little it finds its way into the baby's crib for the "beebee". Yes, folks, he's adorable. Colin has decided on a few nicknames for the baby already. We still don't know if it's a boy or girl (though I'm 99.9% sure it's a boy) so we've had our hands full trying to come up with nicknames for both sexes. Actually, we only decided on a name for a boy three nights ago! Oh well, at least we've got a name before we bring home a new baby.

Holy rambling, batman! I guess since I haven't been able to talk for two weeks you are all going to get a very wordy version of our going-abouts! LOL!

For Christmas we are heading to my mom and dad's in Nephi. Well, actually, we are going down the 17th and then going to Mesquite, NV on the 19th and then spending the 22nd through 26th with my folks. Colin and I are taking a "Baby-moon". We just wanted to get away and not worry about anything before we have two kids in our cozy little home. Plus, my parents graciously offered to watch Gideon and pay for our trip as a graduation present to Colin.

Well, I'm all talked out. I guess I will save whatever incoherent thoughts are still in my brain for next time! Love you all and Merry Christmas!

New Month, New Post

I think I've done a better job of updating this year. At least I think I have! LOL! So it's November and I guess I'll just post about how everything is going:

Actually, we're all sick. I've had it the longest (of course...), Gideon got it and got over it, and Colin started feeling icky today. I don't know what it is...I thought it was just a cold, but man! It sure does knock you out.

Besides that we had a fun family home evening (well, afternoon) yesterday. We went to second dam and had a fire and roasted hot dogs. Gideon absolutely loves the outdoors...just like his daddy! I am so glad that they enjoy the same things; it means I will have plenty of time for me when Gideon gets older, LOL! But seriously, we had a blast!

Halloween was fun and Gideon looked adorable in his little elephant costume! It rained really hard on Halloween night so we rushed out to trick-or-treat around six. Gideon loved it for the first 15 minutes and then...he FELL ASLEEP! I was kinda mad cuz I wanted more candy but it was also terribly adorable!

Well, that is about it for us!

Fun Girls' Weekend

So this weekend my Mom and Heather came up to visit me and we had a BLAST!!!! On Friday, we had a ton of fun making stackers that highlighted Halloween, Thanksgiving, Christmas, and January (winter). We were up until midnight just talking and crafting away! On Saturday, Colin and Gideon joined the girls and we all went to USU's homecoming parade (we lost *tears*) and Gideon just loved it! After that, we took a quick trip to Pepperidge Farms while Gideon took a nap. Then, I drove Colin and Gideon to the football game so my Mom, Heather, and me could have a fun Tea Party! It was so fun! We had chicken salad sandwiches on croissants, homemade banana bread with homemade raspberry butter, and homemade melting moments...oh yeah, and chamomile tea! LOL! We just talked and made plans for Christmas all the while feeling feminine and dainty! We were interrupted with a phone call from Colin to come and get Gideon because it was raining so hard and they were soaked! Gideon did NOT want to leave the game (Colin had to tell him it was over!), but he had to...he was SOAKED! Colin took the manly, true Aggie route and stayed the whole game!

Anyway, the rest of Saturday was spent shopping and looking at cute shops we hadn't been to before. Then we had a yummy country pot roast dinner and talked until eleven! Then it was times for bed so we could be up for church at nine today. Mom and Heather stayed until after Sacrament and then headed for home! We were really sad to see them go but not too sad since we get to see them again next weekend! YAY!

Anywho, that was our very fun-filled (and packed!) girls' weekend!

Gideon's Surprise

Happy Birthday Gideon!!!!

Gideon is finally two!!! Colin and I decided to give him a room makeover for his birthday! It was so much fun to make some of the articles in his room and also shop around for complimenting items!!! Plus, Gideon LOVES it! Spongebob is his absolute favorite (thanks, Aunt Heather ;)) so it is very fitting! He hasn't wanted to leave his "new" room all day long!

Really nothing to say...

Sorry I haven't posted for a while! There just isn't much happening around here! At least not until Monday when we'll celebrate Gideon's 2nd birthday...

Other than that, we've just been doing the usual: Colin is busy, busy at school; I'm substituting whenever I can; Gideon is being as rambunctious as ever!

I just didn't want everyone to think we've disappeared! LOL!

Our Anniversary!

Colin and I have celebrated our 3rd anniversary! We are so glad to have each other and be working towards an eternity of happiness! I just love him so much! He's my everything! Here is my top ten "What I love about Colin" list:

10. The way he comes up with nicknames for Gideon: Gumba, Chalupo, Sancho, etc.
9. The way he is so dedicated in school.
8. How he gets me a glass of water when I'm too lazy to get it myself.
7. The way he whistles to let me know when he comes home from work or school.
6. The way I can ask him anything about the Gospel and he takes the time to study it out and helps me find the answers.
5. The way he pulls on the front of his hair when he's concentrating or watching something interesting on TV.
4. The way he puts up with all of my crafting.
3. His faithfulness to home, family, and the Gospel.
2. He's the greatest daddy in the world.
1. He chose ME to be his eternal companion!

I love you, boo! I would still rather hang out and sleep on the futon matress watching movies all night in the living room than do anything else! I can't wait for our eternity of years to come!

Happy 90th Birthday, Grandpa!

This weekend Colin, Gideon, and I joined with the rest of my Petersen side in celebrating my grandfather's 90th birthday. It was such a joyful experience and one I am thankful to be able to be a part of. My grandpa has always been someone I not only care deeply about but look up to and admire. He is such a great example of patience, service, and love. He is also so FUNNY! I remember many times he would ask Heather, Patrick, and I to rub his feet for $1! It wasn't the most pleasant, but we did it anyway because we love him...and we got $1 to use at the Hinckley gas station!

Some of my favorite memories of Grandpa Petersen are playing dimes at his house, listening to him recite "I Used to Kill Birds In My Boyhood," singing songs with him, and listening for those all-too familiar sayings of his.

A lesson I learned from my Grandpa:

We were coming to visit him one day and as we walked in the door he said, "Well, who's that?" (One of his all-too-familiar sayings! He knows who we are!) I said hi and went to kiss him but noticed he had been eating Oreos...grandpa always ends up with Oreo all over! Well, as I went in for the kiss, I turned my head so his kiss would land on my cheek but he just grabbed my face, kissed me on the lips, and said "You don't turn your cheek to your grandpa!" I haven't since!

We love you, Grandpa and we treasure the legacy you continue to leave for the Petersen family!

IT'S A.......

SURPRISE! Haha! Today was my 5 month check-up and we were able to get some beautiful pictures of the baby through the ultrasound. Of course, we didn't find out the sex of the newest addition to our family! We are so excited for our little suprise! I really thought we would cave but we're stronger than I gave us credit for! LOL! For some reason I can't upload a picture right now...sorry :(

I hate cleaning...

Colin is on a total cleaning frenzy... I'm annoyed... Gideon is everywhere at once... Ahhh, our life! I hate cleaning on a Saturday! It's terrible! My mom made us clean every single day of the week and then on Saturday we "deep"-cleaned which basically meant we had to move every single piece of furniture and clean behind every little crevace... My mom is such a clean freak, but her house is always spotless. Whatever, I hate it. Plus, I have an almost two-year-old I can blame it on! LOL!

So I decided to blog to pass some time while Colin isn't looking! :-0 Shocking I know! The thing is, I really don't have anything to say!!!! I had planned on going to a Pow Wow today and playing in the pool but as you know...my plans have changed.

OOOH! Colin is on his way back here! I have to go! "No honey, I'm totally busy cleaning!" HAHA!

AT LAST!!!!

Ok, so I'm half Guatemalan and totally pregnant which means my pregnancy cravings (mis antojitos to you bilingual peeps) are pretty much for the simpleness of Guatemalan yummies! This craving (the most persistent yet, further intensified by wait time...read on) was for chicharrones. Yes, I'm craving fried pork skins. If you haven't tried it you don't know. Anywho...I set out on my quest for chicharrones Tuesday of last week. No luck finding them in Mexican stores throughout Utah County...ok so I only checked one, whatever. This week the hunt was on!!!! Monday, we went food shopping and I was so tired afterward that I didn't make it to the Mexican store on 1400 North to see if the had any. Tuesday, I went to said store and they told me the chicharrones would arrive by 4 o'clock. At 5pm, I went back to that store and lo and behold, NO CHICHARRONES. The lady who makes them didn't come in but will have them by opening tomorrow. Ok, Wednesday now. At approx. 10 a.m. I strap Gideon into his stroller and make my way to the store (they had two bags left and I told them to save me one and I would pick it up pronto!). I get to the store and the lady there gives me Mexican chicharrones...not pork rinds. Mexican ones are basically called chicharrones de harina or made of flour. Anyway, NOT the fatty goodness the "baby" (yes, me) wants to experience.

Well, by now I'm totally determined to get me some chicharrones one way or another. If I have to raise a pig myself and make them, I will have them!!! So I check at the largest Mexican store in Logan...with false promises of having them on Friday or Saturday I go to the meat counter and ask when they will have more: "Oh, we don't sell those here!" GRRRRR!!!!

I have one last chance, and I've been promised I will find them at Rita's Panaderia y Pasteleria. With hopes held at bay, I quickly take Gideon into the store to face my final disappointment...wait! What's that at the back??? Could it be? Really? YES! Finally!!! Chicharrones!!!! I bought myself a half pound of just skins and a half pound with meat too. Gideon and I enjoyed our well-deserved lunch of minced chicharrones, lemon (didn't have a lime), salt, tortillas, and avocado. Take that craving!

Summer fun!

So Gideon has stayed pretty busy entertaining Colin and I! He is such a busy little guy! It's fun but can be extremely tiring! Maybe it's cuz I'm preggers? LOL! Well, one morning, during one of the times that I was too tired to entertain him myself, I put him to work creating his very first fingerpainting masterpiece! Here are the results!
Colin said: "Wow, that's better than some crap (not that this is crap, I'm just saying if an adult did it it's crap) I've seen at museums!" Oh, my hubby is so funny! And, yes, that is an old pizza box!
